Can teachers' indispensability criteria be customized per committee?
Yes. When creating the session, in the display Class committees > Committees > 
List of the committees and courses, define the indispensability criteria that apply to the majority of the committees.

Note
You can then modify them on a case-by-case basis, once the committees have been created (selection committee > right-click > command Update the participants).
