How do I configure the rubrics published on the mobile application?

You can't configure the rubrics of the mobile version independently from those of the Webspaces. To consult the list of rubrics and functionalities available on both the Webspaces and the application, go to the configuration displays of the Webspaces: the ** indicate the availability of the rubric from the mobile version.
