  I can't modify a MCQ after linking it to a competence evaluation/graded assignment....

Evaluations and tests linked to a MCQ appear on a shaded line below the MCQ, which itself appears on a colored line (orange by default). To modify the MCQ, select the colored line (not the shaded line) and then double-click on the concerned question, on the right-hand side of the screen.
