Can a teacher's absence be entered without his or her courses being cancelled?

Yes. Select the canceled course on the timetable grid, right-click on it and select the option Modify > Place in Study Hall/Library.

You can then change the label, if necessary, by selecting it from the drop-down menu at the top of the course form (with, for example, Class meeting maintained).
