Are the cancelled class meetings counted in the teacher's services?

The counting of canceled class meetings in the teacher's services depends on the cancelation motive. You can find all possible cancelation motives in the menu Parameters > Course > Cancelation motives. Canceled class meetings are counted if, next to the cancelation motive, the column Paid is ticked.

To display the canceled class meetings in the tab Schedules > Teachers > Services per teacher, click on the button

at the top right and tick Display the canceled courses and count those that are remunerated in the cost in the pop-up window. When the list is unfolded, canceled class meetings are displayed with the [a] icon in the column Status.
