  The Specializations tab has been renamed Specializations and needs: does this mean I have to plan my 5th grade French and Math courses in this tab?

The features useful for generating groups and specialization courses can be used to generate groups and needs courses but this is not a requirement! They are only useful if you don't have enough teachers for standard alignments and want to create hybrid alignments with French and Math.
